Sugars are very hard to delineate from what is high grade from what is not. That is why ICUMSA or the International Commission For Uniform Methods Of Sugar Analysis devised a standard in categorizing the quality of refined sugar produced. The standard protocol of ICUMSA is the whiter the sugar, the more refined it is. One such Category is Icumsa 45. Icumsa 45 sugars are the highest grade of sugar that is a sparkling white which is suitable for human consumption and used in many kinds of applications. The Icumsa 45 is made using the liquid extracts of sugar canes and sugar beets. The whiteness of the Icumsa 45 is determined by a colormeter, which measure the sugar’s degree of clarity and whiteness. Icumsa 45 is a standard category so than wherever you go, you know that the same process and measurement are used to determine the quality of the sugar. So the next time to will buy sugar, make sure to read the label and know if it is Icumsa 45 or not. BTW in some European countries, Icumsa 42 is used rather than Icumsa 45.

mas mataas kasi ang purity ng puting asukal. yun nga lang, heavily processed so sweet lang talaga sya. the colored ones, though less sweeter, are more flavorful. meron pa kasi silang ibang kasamang complex saccharides. teka, umiiral ang pagka-kemis ko. hehe…
